15N20 vs O1
An unusual matchup that comes up more than you would think, because both steels end up on the same kitchen-knife shortlist. O1 brings fine carbides and real wear resistance; 15N20 brings toughness that lets you grind thinner and run harder. Which wins depends on whether your edge fails by dulling or by chipping.
Quick Verdict
Choose 15N20 if you grind thin and want maximum durability at high hardness — it is the tougher steel by a wide margin and easier to heat treat. Choose O1 if you want the edge to last longer between sharpenings and you have the kiln control to do it properly.
Toughness
15N20 wins decisively. Nickel-refined grain and near-zero alloy carbide give it impact resistance O1 cannot approach — and it keeps that toughness at 61 to 62 HRC, a hardness at which O1 is distinctly chippy. This is the single biggest difference between them.
Edge Retention
O1 wins. Its chromium and tungsten carbides give real wear resistance that 15N20's plain structure lacks, so in sustained slicing O1 holds on longer. 15N20 narrows the gap by running harder, but it does not close it.
Corrosion Resistance
15N20 is slightly better thanks to nickel, O1 slightly worse despite its half-percent of chromium. In practice both are carbon steels that will spot and patina — the difference matters in an etching tank, not in a kitchen.
Heat Treat
15N20 is easier. It austenitizes at 1475 to 1500°F with a short soak and quenches in fast oil, with wide margins. O1 needs a genuine 10 to 15 minute soak at a controlled 1475°F and a medium-speed oil, and it punishes overshoot — 1550°F costs toughness with no hardness gain. Both temper low.
Grinding
Both are friendly. O1's advantage is that it arrives as precision ground flat stock, flat and square. 15N20's thin sheet heats fast under the belt and needs more dipping, but it hand-sands cleanly and shows no coarse carbide tear-out.
Best-Use Scenarios
15N20: thin kitchen knives, slicers, EDC and any blade where chipping is the failure mode you fear. O1: kitchen knives, hunters, folders, razors and shop tools where you want the longest edge life a low-alloy steel can give.
